🥒🔥 Zucchini Fritters in 5 Minutes — Crispy Outside, Tender Inside and So Easy!
Have extra zucchini sitting in the refrigerator? Turn it into these irresistibly crispy Zucchini Fritters!
They are golden around the edges, tender and flavorful in the center, and made with simple ingredients you may already have in your kitchen. Serve them for breakfast, lunch, dinner, or as a quick appetizer with cool sour cream, ranch dressing, or garlic yogurt sauce.
Although the fritters cook in about five minutes per batch, the most important secret is removing as much liquid as possible from the zucchini. That simple step keeps them crispy instead of soft and watery.
⏱️ Prep Time: 15 minutes
🔥 Cook Time: About 5 minutes per batch
🕒 Total Time: Approximately 25 minutes
🍽️ Servings: 4
🥒 Yield: About 10–12 small fritters
Ingredients
- 2 medium zucchini, approximately 1 pound total
- ¾ teaspoon kosher salt, divided
- 2 large eggs
- ½ cup all-purpose flour
- ⅓ cup freshly grated Parmesan cheese
- ¼ cup finely sliced green onions
- 2 garlic cloves, minced
- ½ teaspoon onion powder
- ½ teaspoon smoked paprika
- ¼ teaspoon freshly ground black pepper
- 2 tablespoons chopped fresh parsley or dill
- 2–3 tablespoons olive oil or avocado oil, for frying
Optional Dipping Sauce
- ½ cup sour cream or plain Greek yogurt
- 1 tablespoon fresh lemon juice
- ½ teaspoon garlic powder
- 1 tablespoon chopped dill or parsley
- Salt and black pepper to taste
Instructions
1. Grate the Zucchini
Wash and dry the zucchini.
Trim off the ends, then grate the zucchini using the large holes of a box grater.
There is no need to peel it. The green skin adds color and helps the fritters look fresh and appetizing.
2. Salt and Rest
Place the grated zucchini in a colander set over a bowl.
Sprinkle it with ½ teaspoon kosher salt and toss gently.
Let it rest for approximately 10 minutes.
The salt draws out excess moisture, which is one of the most important steps for achieving crispy fritters.
3. Squeeze Out the Liquid
Transfer the zucchini to a clean kitchen towel or several layers of cheesecloth.
Gather the towel tightly and squeeze over the sink until as much liquid as possible has been removed.
You may be surprised by how much water comes out.
When the zucchini remains wet, the fritters can spread, steam, or become soggy instead of crisp.
4. Prepare the Batter
Place the dry zucchini in a large mixing bowl.
Add the eggs, flour, Parmesan, green onions, garlic, onion powder, smoked paprika, black pepper, parsley, and the remaining salt.
Stir until evenly combined.
The mixture should be moist but thick enough to hold together when pressed with a spoon.
When it looks extremely wet, add one additional tablespoon of flour.
5. Heat the Skillet
Heat 2 tablespoons of olive oil or avocado oil in a large nonstick or cast-iron skillet over medium heat.
Allow the oil to become hot and shimmering before adding the batter.
A properly heated skillet helps the fritters begin forming a crisp crust immediately.
6. Cook the Fritters
Scoop approximately 2 tablespoons of batter into the skillet for each fritter.
Gently flatten each mound with the back of the spoon.
Leave space between them and cook in batches when necessary.
Cook for approximately 2–3 minutes on the first side.
When the bottoms are golden and the edges look set, carefully flip the fritters.
Cook the second side for another 2 minutes, or until golden brown and cooked through.
7. Drain and Serve
Transfer the cooked fritters to a wire rack or a plate lined with paper towels.
Add a little more oil to the skillet when cooking the next batch.
Serve the fritters warm with sour cream, Greek yogurt sauce, ranch dressing, salsa, or your favorite dip.
Quick Garlic Yogurt Sauce
Combine sour cream or Greek yogurt, lemon juice, garlic powder, herbs, salt, and black pepper.
Stir until smooth and refrigerate until serving.
Tips for Crispy Zucchini Fritters
✅ Remove plenty of moisture: Wet zucchini is the main reason fritters become soggy.
✅ Use a hot skillet: The oil should shimmer before the batter is added.
✅ Keep them small: Smaller fritters cook quickly and flip more easily.
✅ Do not overcrowd the pan: Crowding lowers the skillet temperature.
✅ Do not flip too early: Wait until the first side forms a golden crust.
✅ Serve quickly: The fritters are crispiest shortly after cooking.
