Instructions
1. Crush the Cookies
Place the vanilla wafer cookies in a food processor.
Pulse until they become fine crumbs.
When a food processor is unavailable, place the cookies in a sealed food-storage bag and crush them with a rolling pin.
Fine crumbs produce smoother, more uniform balls.
2. Prepare the Lime
Wash and thoroughly dry the limes.
Finely grate only the green outer peel.
Avoid the bitter white pith underneath.
Squeeze and measure the fresh lime juice.
3. Beat the Cream Cheese
Place the softened cream cheese in a large mixing bowl.
Beat for approximately 1 minute until smooth.
Add the powdered sugar, lime juice, lime zest, vanilla, salt, and optional lime extract.

4. Add Optional Tequila
For the adult version, mix in 1 tablespoon tequila.

5. Add the Cookie Crumbs

When it feels too dry, add one teaspoon lime juice or cream cheese.
6. Chill the Mixture
Cover the bowl and refrigerate the mixture for approximately 30 minutes.

7. Shape the Balls
Scoop approximately 1 tablespoon of mixture at a time.
Roll it between your palms into a smooth ball.

8. Melt the White Chocolate

Add coconut oil when the coating is too thick.
Do not overheat the chocolate.
9. Coat the Balls
Use a fork or dipping tool to lower one chilled ball into the melted chocolate.
Turn it until completely coated.
Lift it out and allow excess chocolate to drip back into the bowl.
Place it on parchment paper.
10. Decorate
Before the coating sets, sprinkle each ball with lime zest, coarse sugar, or a tiny amount of flaky salt.
Let the coating set completely.

Skip the white chocolate.
Combine:
