Ingredients
Cherry Filling
- 6 cups pitted fresh or frozen cherries
- ¾ cup granulated sugar
- ¼ cup cornstarch
- 2 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract
- ¼ teaspoon almond extract, optional
- ¼ teaspoon kosher salt
Cobbler Topping
- 2 cups all-purpose flour
- ⅓ cup granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon kosher salt
- ½ cup cold unsalted butter, cubed
- ¾ cup whole milk or buttermilk
- 1 teaspoon vanilla extract
Optional Topping
- 2 tablespoons coarse sugar
- Vanilla ice cream
- Whipped cream
Instructions
1. Preheat the Oven
Preheat oven to 375°F.
Lightly grease a 9-by-13-inch baking dish.
2. Prepare the Cherry Filling
Combine cherries, sugar, cornstarch, lemon juice, vanilla, almond extract, and salt.
Stir until evenly coated.
Transfer the mixture to the baking dish.
3. Make the Cobbler Topping
Whisk flour, sugar, baking powder, and salt together.
Cut in the cold butter until the mixture resembles coarse crumbs.
4. Add the Milk
Pour in the milk and vanilla.
Stir only until a soft dough forms.
Do not overmix.
5. Top the Cherries
Drop spoonfuls of dough evenly over the cherry filling.
Leave a few small openings so steam can escape.
Sprinkle with coarse sugar.
6. Bake
Bake for 40–45 minutes.
The cobbler is ready when:
- The topping is golden brown
- The cherry filling is bubbling around the edges
- The biscuit topping is fully baked in the center
7. Cool Slightly
Let the cobbler rest for approximately 15–20 minutes.
The filling will thicken as it cools.
8. Serve
Spoon into bowls while still warm.
Top with:
- Vanilla ice cream
- Whipped cream
- Powdered sugar
Using Frozen Cherries
Frozen cherries work beautifully.
Do not thaw them completely.
Add an extra 1 tablespoon cornstarch if they release a lot of liquid.
The cobbler may need another 5–10 minutes of baking time.
Using Canned Cherries
Use approximately 4 cans tart cherries, drained.
Avoid canned cherry pie filling unless you want a much sweeter and softer filling.
Easy Cake-Mix Cherry Cobbler

Spread the cherry filling in a baking dish.
Sprinkle dry cake mix evenly over the top.
